There’s no doubt about it, summer in Australia gets HOT. It can be easy to lose the motivation to cook, especially meals that require the use of hot ovens or long cooking times.

If you’re struggling to come up with practical summer meal ideas, here are a few meals that are short on cooking time, and don’t require an oven. They’re also great options if you’re only cooking for one.


Frittatas are a great alternative to quiches, because you don’t have to bother with crust. You don’t have to use an over either, because they cook in a pan. This also means they don’t take as long to cook. Another upside to frittatas is that you can use almost anything. You can use whatever you already have in the fridge, and you don’t have to go out and buy any special ingredients. If you have eggs and some veggies or leftovers, you’ve got a frittata.

Use whatever vegetables you have in the fridge, capsicum, tomatoes, spinach, potatoes, peas, corn, add some cheese, and keep it vegetarian if you like. Or you add some bacon, chicken, or even salmon if you like. Anything goes!

A great way to get more protein and fibre into your salads is to add grains. You can use lentils, pearl couscous, or even quinoa to bulk up your salads, along with roasted or grilled veggies, and add a protein like halloumi, chicken, or even salmon. Add some toasted nuts for extra protein and healthy fats – or just because they taste great!
